Game Day Goodie: Greek Salad Nachos
Eating healthy and sticking to a plan does not have to mean eating boring! These Greek Salad nachos can fit into your diet plan and satisfy your family’s taste buds as well. One serving is only 159 calories, so it would be great for an appetizer or afternoon snack, or double the serving and add chicken for a meal!
What you will need
1/3 cup prepared hummus
2 tbs. extra-virgin olive oil
1 tbs. lemon juice
1/4 tsp. ground pepper
3 cups whole-grain pita chips
1 cup chopped romaine lettuce
1/2 cup quartered grape tomatoes
1/4 cup crumbled feta cheese
2 tbs. chopped Kalamata olives
2 tbs. minced red onion
1 tbs. minced fresh oregano
Whisk hummus, oil, lemon juice and pepper in a small bowl.
Spread pita chips in one layer on a platter. Drizzle ¾ of the hummus mixture over the chips. Top with lettuce, tomatoes, feta, olives and red onion.
Dollop with the remaining hummus mixture and sprinkle with oregano.
