Game Day Goodie: Nutrient-Packed Breakfast Egg Muffins

This recipe is sure to please even the pickiest of eaters. A make-ahead breakfast or snack that can be eaten on the go, at the kitchen table or even while sitting at your work desk. Including a healthy source of protein and fat will help to keep you full and more satisfied throughout the day!


What you will need

12 large eggs

1/4 cup nonfat milk

1 cup chopped fresh spinach

3/4 cup quartered cherry tomatoes

1/2 cup diced onions

sliced avocado, salsa and cheese for serving



Preheat oven to 350F and grease a muffin pan with cooking spray.


In a large bowl, whisk together the eggs, nonfat milk and ½ tsp pepper.


Stir in the spinach, tomatoes and onion.


Divide the mixture evenly between the 12 muffin pan cups and bake the muffins for around 20-25 minutes or until the egg is fully cooked.


Remove from oven and let cool for 5 minutes before serving.


Top with sliced avocado, a dollop of salsa, a sprinkle of cheese or all for serving.
