Game Day Goodie: Spaghetti Squash

by | Feb 1, 2019 | Articles, Life & Style, Nutrition

Try this spaghetti squash recipe for an easy, fun, and low calorie option. It calls for garlic, tomatoes, black olives, basil, and feta cheese for a fun Greek flair. One serving has 4 grams of protein, so if this is your main entrée try adding grilled chicken.

What you will need

1 spaghetti squash, halved lengthwise and seeded

1 tbsp. vegetable oil

1 tsp. minced garlic

1.5 cups chopped tomatoes

3/4 cup crumbled feta cheese

3 tbsp. black olives, sliced

2 tbsp. fresh basil, chopped

Preheat oven to 350 degrees.

Place spaghetti squash, cut sides down, on a lightly greased baking sheet. Bake for about 30 minutes, until a sharp knife can be inserted with little resistance. Remove from oven and let cool.

Meanwhile, in a large skillet, saute garlic in hot oil for 1-2 minutes. Stir in tomatoes and cook until warmed through.

Using a large spoon, scoop the stringy pulp from the squash. Add to skillet and toss with vegetables, feta cheese, olives, and basil. Serve warm.
